Food trucks at a wedding? Yes, please! We love the fun, festival feel of food truck receptions. We’ve hosted many, and we’ve learned how to make them run smoothly. Here are our top tips if you’re planning a food truck wedding at Rixey Manor.
Mix and Match Trucks
For up to ~120 guests, we recommend having three dinner trucks and one dessert truck. Aim for variety — for example:
One truck serving tacos
One wood-fired pizza truck (great for quick slices and keeping lines short)
One truck offering BBQ or burgers
A dessert truck with ice cream, donuts, or cupcakes
At least one truck should provide hearty appetizers during cocktail hour, or you can set out stationed appetizers from one truck. Guests love choice, but too many trucks can get overwhelming (and expensive).
Simplify the Menus
Work with each truck to narrow down their offerings to two or three entrées. A shorter menu means quicker ordering and faster lines. Printing menus and placing them on tables (or displayed on a large sign) lets guests decide before they line up. This small step makes a huge difference in flow.
Coordinated Serving Ware
Food trucks typically serve in disposable baskets or paper plates. To keep everything looking polished, you can supply cohesive serving ware — like chic biodegradable plates, bamboo cutlery, or personalized napkins. Many couples ship these directly to Rixey ahead of time, so the trucks can use them. This simple touch ties everything together visually.
Rentals & Table Setup
Food trucks provide the food, but not the dining setup. You’ll need to arrange rentals for tables, chairs, linens, and sometimes even buffet tables if a truck does stations. Don’t worry — we’ll guide you through how many you need and help coordinate deliveries. We also make sure you have enough trash cans positioned around the property to handle disposable serving ware.
Staffing for Food Truck Receptions
Remember: food trucks cook and serve from their windows, but they don’t bus tables, refill drinks, or manage guest areas. You’ll need banquet staff for that. At Rixey, we recommend one Event Captain plus about one staff member per 20 guests (for 120 guests, that’s 1 captain + 6 staff). Our team knows the property and can keep things running smoothly, or we can connect you with a full-service partner if you want uniformed, formal staffing. This investment is worth it — you don’t want family or friends cleaning up during your reception.
Timeline Adjustments
Food trucks take a bit longer to serve than a plated or buffet meal. To keep the flow smooth, we recommend doing introductions, dances, and speeches before dinner. Once guests spread out to trucks and tables, it’s harder to gather everyone for one big moment. By front-loading formalities, you give guests the freedom to eat when they like and hit the dance floor as soon as they’re ready. Backup Plan for Weather
Food trucks are outdoor by nature, but we always have a backup. Trucks can park near our covered porch or patio so guests can line up under shelter, or in extreme cases, serve from a side door. If it’s chilly or wet, we can move some tables indoors to keep everyone comfortable. Flexibility is key — a little drizzle won’t ruin the fun of a food truck dinner.
Special Situations
Many couples combine traditional catering with a food truck for the best of both worlds — like a catered dinner and an ice cream truck for dessert, or a late-night pizza truck at 10PM. This works perfectly as long as your main caterer knows in advance so they don’t over-cater on dessert or snacks. We’ll coordinate timing so the truck rolls in just when it’s needed.
